Riesling semi-dry

Ingredients

• 400 gKing prawns (peeled and deveined)
• 400 mlCoconut milk
• 2 tbspRed curry paste
• 1 pieceRed bell pepper
• 150 gSnow peas
• 1 tbspFresh ginger (grated)
• 1 pieceGarlic clove (minced)
• 2 tbspFish sauce
• 1 tbspLime juice
• 1 tspBrown sugar
• 200 gJasmine rice
• 2 tbspVegetable oil
• 0,5 bunchFresh cilantro

Preparation

1. 1Cook the jasmine rice in lightly salted water according to the package instructions.
2. 2Cut the bell pepper into fine strips and wash the snow peas.
3. 3Heat the oil in a pan or wok and toast the curry paste until fragrant.
4. 4Sauté the garlic and ginger briefly, then deglaze with the coconut milk.
5. 5Bring the sauce to a boil, add the vegetables, and simmer over medium heat for about 5 minutes.
6. 6Add the shrimp to the curry and let them cook for 3-4 minutes until done.
7. 7Season the curry with fish sauce, lime juice, and brown sugar to taste.
8. 8Serve in deep bowls with the rice and garnish with fresh cilantro.
