Secco Rosé

Ingredients

• 800 gWatermelon
• 200 gFeta cheese
• 0,5 pieceRed onion
• 0,5 bunchFresh mint
• 2 tbspLime juice
• 3 tbspExtra virgin olive oil
• 1 pinchBlack pepper

Preparation

1. 1Remove the rind from the watermelon, discard any seeds, and cut the flesh into approx. 2 cm cubes.
2. 2Drain the feta cheese well and either cut into small cubes or crumble coarsely with your fingers.
3. 3Peel the red onion and slice into paper-thin rings or fine strips.
4. 4Pluck the mint leaves from the stems, rinse briefly under cold water, pat dry, and slice into fine strips.
5. 5In a small bowl, whisk together the fresh lime juice and olive oil to create an emulsion.
6. 6Place the watermelon cubes in a large bowl together with the onion rings and mint, and gently toss with the dressing.
7. 7Arrange the salad on plates or a platter, sprinkle the feta over the top, and serve with a pinch of freshly ground pepper.
